The mixture of water, yeast and sugar, creates a powerful gas (carbon dioxide or CO2). If only water and yeast mix gas is underpowered and if we do not add any water gas is created.
The gases wanted out of the bottle and so the balloon is inflated.

After 20' the bottle of warm watter with fresh yeast and sugar, the balloon blowwed.
The others bottles no blowweds.
